Protein Packed One Pan Breakfast!

I'm always looking for new delicious recipes to add to my menu.  Variety is the spice of life right!? Keeping your tastebuds guessing keeps you engaged and more likely to continue eating clean and healthy.  I was cruising Pinterest(which I love to do when I have time) and found my inspiration for this Breakfast Frittata.  Not only is it packed with protein but I can make it ahead of time and take it on the go. This recipe will provide you with breakfast for 6 days and takes almost no effort!


  • 2 Whole Eggs
  • 1.5 Cups Egg Whites 
  • Ground Turkey(or Chicken)
  • Veggies(You can easily substitute any veggies in your fridge)
    • Asparagus 
    • Spinach 
    • Broccoli
    • Onion
  • Salt, Pepper, Red Chili Flakes 
In a cast iron skillet add 1 TBS of Olive Oil.  Sautee the onion for 3-4 minutes.  Dice all veggies and throw them in the pan and cook for another 5 minutes.  Add desired ground meat and cook until meat is fully cooked(add seasonings to taste).  In a separate bowl mix the 2 whole eggs and egg whites.  Add the egg mixture to the pan and cook for about 8-10 minutes.  Turn on the broiler and put the skillet under the broiler for about 5 minutes or until eggs are fully set.  

Let it cool, then slice into the desired number of pieces.  Share with the family for a delicious breakfast or wrap in foil for breakfast that is ready to go all week! 

Don't forget the enjoy each and every meal.  Eating clean and healthy does not mean that it has to be boring and tasteless!
